We grow organic coffee in the natural way under multilevel diverse canopy. The high canopy includes hardwoods that provide a sustainable source of building materials. The medium canopy includes fruit trees that provide fruit. The coffee shrub is nurtured by the leaves that drop to the ground and are converted to nutrients by microorganisms . As in a forest, this environment must be perfectly balanced to function. At harvest the coffee is picked daily as each cherry reaches its full red ripe color. The cherries are milled removing the pulp from the bean. The beans are fermented, then rinsed and dried in the sun. These beans are then dry-hulled again and shipped green to Taylor Maid and others where they are roasted. We also propagate future coffee plants from these beans/seeds.

At Aquatica we solely roast Finca El Peten beans for every espresso and coffee drink in house. Micro-Roasting small batches to ensure perfect balanced bean temperament. We carefully roast everything just between first and second crack, which is essential in order to maintain natural fruit oils and core flavors.
Our drinks are all made to order and our coffees are hand poured by the cup to avoid over extraction and excess harmful acidity. It doesn’t get any fresher or tastier. We make everything from scratch in house using strictly Organic and GMO-free ingredients.
